Roasted Eggplant

I love roasting vegetables, it is so easy & delicious!

  • 1 large eggplant

  • 3 tablespoons extra virgin olive oil

  • salt and

pepper to taste

  • parmesan cheese to taste (optional)

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or lightly grease. Mostly I use the non-stick foil (it is great).

  2. Slice the eggplant in half lengthwise, then cut each half into quarters lengthwise. Cut each of those in half to make two shorter quarters. Place the eggplant onto the baking sheet with the skin side down. What I do is put the eggplant, olive oil, salt & pepper into a ziplock bag and shake. I even marinade the vegetables for a little while I am putting the rest of my dinner ready to cook.

  3. Roast in the preheated oven until softened and golden brown, 25 to 30 minutes. Remove from the oven sprinkle with parmesan cheese if you choose.
