Layered Mozzarella and Tomato Salad

4 large ripe tomatoes, sliced

2 lbs fresh mozzarella cheese, sliced

1/4 cup chopped fresh basil

1/4 cup chopped fresh parsley

capers (optional)

1/2 cup vinaigrette (recipe follows)

fresh ground pepper to taste

On a large platter, alternate slices of tomato and cheese. Sprinkle with basil and parsley over all. Drizzle with vinaigrette over all, then sprinkle with ground pepper and capers. Serve at room temperature.

Vinaigrette:

1 tbs dijon mustard

4 tbs balsamic vinegar

1 tsp sugar

1/8 tsp salt

1/2 tsp pepper

1/2 cup olive oil

Combine all ingredients. Make just before serving.
