Citrus Beef Stir Fry

1 (1 1/2 lbs) Sirloin Steak

2 tsp grated orange zest

plus 1/2 cup juice

2 tbs rice vinegar

2 tbs soy sauce (low sodium)

1 tsp red curry paste

1 tsp ground ginger

2 tsp cornstarch

4 tsp coconut oil

2 greens of green onion, sliced thin

Cooked rice noodles

Slice Sirloin Steak lengthwise with the grain into 2 inch wide pieces, then cut each strip crosswise against the grain into thin slices. Wisk the orange zest, juice, vinegar, soy sauce, red curry paste, ground ginger and cornstarch together in a bowl.

Heat 2 tsp coconut oil in a 12" skillet over medium-high heat until just smoking. Pat the steak dry with paper towels. Cook half of the steak until browned, about 1 minute per side. Transfer to bowl and repeat with remaining vegetable oil and steak.

Add orange mixture to empty skillet. Cook over medium heat, scraping up any browned bits, until thickened, 3 minutes. Add steak, along with any juices, to the skillet and toss to coat. Sprinkle with the green onion greens.

Serve over cooked rice noodles.
