Easy Homemade Crab Cakes
1 1/4 Cups Yogurt
3 tbs Fresh Squeezed Lemon Juice
Plus 1 Lemon cut into wedges
1 tbs Fresh Minced Parsley
1 tsp Franks Hot Sauce
or more if desired
1 lb Lump Crab Meat (2 Cans)
(shells removed)
1 Cup Panko Bread Crumbs
2 Green Onion, Minced
2 Olive Oil
Whisk Yogurt, Lemon Juice, Parsley and Franks Red Hot together in a large bowl. Carefully fold in the Crab Meat, Bread Crumbs and Green Onion into the Yogurt Mixture to combine. Form the Crab Meat mixture into 4 patties, about 3 inches each.
Heat 2 tbs Olive Oil in a nonstick skillet over medium-high heat. Add Crab Meat Patties to the skillet and cook until they are golden brown for about 5 minutes on each side.
Serve with mixed greens and sliced lemon wedge.
