Asparagus Parmesan

Quick, easy, healthy and delicious what more can we ask for!

2 lbs fresh asparagus spears

2 Tbs olive oil



1/2 cup finely shredded parmesan cheese

Wash asparagus, cut off and discard woody ends from the asparagus spears. Place asparagus in a gallon zip lock bag then add the olive oil, salt and pepper. Gently shake until well combined, let sit for about a 1/2 hour, give or take. (Depending on the time you have.)

I cover a baking sheet with non-stick foil (easy cleaning). Spread out in a single layer on a 14x10x1 inch baking pan.

Bake in a 400 degree F oven for about 10 to 15 minutes or until asparagus are crisp tender

(becareful not to over cook or they will get stringy and tough).

Transfer asparagus to a serving platter and sprinkle with parmesan cheese.

Makes 6 servings.
