Kale Salad Easy & Delicious

Kale Salad is best after a few hours even better the next day!

Make enough to enjoy all week.

Prep Time: 15 minutes Cook Time: 3-5 minutes Servings: 3-4

  • 1 large bunch raw kale

  • 1/4 cup sliced raw almonds

  • 1/4 cup dried cherries

  • 1/8 cup grated parmesan cheese

  • 1/2 lemon, juiced

  • 1/4 cup extra virgin olive oil

  • Sea salt and ground black pepper to taste

Remove stems and chop kale into thin ribbons. Combine in a large bowl with the olive oil and lemon juice. Massage with lemon juice mixture to soften the leaves, until kale softens then drain any liquid released from the kale. Toast almonds in a skillet over medium heat until they begin to brown, remove from heat. Add almonds and dried cherries to the kale and toss. Season with sea salt and freshly ground black pepper to taste. Top salad with shaved parmesan cheese (optional).
