Meatloaf Lovers Meatloaf

My husband tells everyone that he married me for my meatloaf!

As a child I could not stand when we had meatloaf for dinner, I would not eat dinner that night - blaaa!! Until I began dating my now wonderful husband. Of course his favorite meal is meatloaf!! I wanted to please him, as we all do for the special people in our lives. I began experimenting in the kitchen.

This is the recipe that I came up with. I hope that you and your loved ones enjoy this as much as we do. The Ingredients:

  • 2 tbs Olive Oil

  • 1/2 Small White Onion, chopped

  • 8 oz Mushrooms, chopped

  • 1/8 tsp Red Pepper Flakes

  • 2 tbs Montreal Steak Seasoning

  • 1/2 tsp Thyme

  • 1/2 tsp Garlic Salt

  • 1/4 cup Parmesan Cheese

  • 1/4 cup Chicken Stock

  • 2 tbs Worcestershire Sauce

  • 3 Eggs, lightly beaten

  • 1/2 cup Panko Breadcrumbs

  • 1 lb Ground Turkey

  • 1 lb Ground Beef Sirloin

The Topping:

  • 2/3 cup Ketchup

  • 4 tbs Brown Sugar

  • 2 tbs Mustard

Preheat Oven to 350 Degrees - Cook for 1 Hour and 30 Minutes

Heat olive oil in a large saute pan over medium-high heat. Add mushrooms and onion. Saute until mushrooms are browned, about 5 to 6 minutes.

Stir in red pepper flakes, garlic salt, and thyme then saute for 1 more minute. Add chicken stock and worcestershire sauce, remove from heat and allow to cool.

In a large bowl, combine egg, panko, montreal steak seasoning, parmesan cheese and mushroom mixture. Fold in turkey and ground beef to combine. Don't over work or the meatloaf will be tough.

Place into greased oil sprayed meatloaf pan. Spoon 1/2 of the topping on top of the loaf and bake for 45 minutes, then add the rest of the topping and finish cooking.
