Mac & Cheese - Baked


Mac & Cheese

I have made this Mac & Cheese recipe many times for parties and events. The serving dish is always empty at the end of the evening.

3 tbs panko whole wheat dry breadcrumbs

1 tsp extra-virgin olive oil

1/4 tsp paprika

1 16 pkg-oz fresh spinach

1 3/4 cups almond milk

3 tbs flour

2 cups shredded colby-jack & muenster cheese

1 cup cottage cheese

1/8 tsp ground nutmeg

1/4 tsp salt

pepper to taste

2 cups whole-wheat elbow macaroni or penne

To start boil a large pot of water, preheat oven to 450 F, coat a 8 inch (2 qt) baking dish with cooking spray.

Mix panko breadcrumbs, oil and paprika in a small bowl.

Heat 1 1/2 cups almond milk in a large sauce pan over medium high heat until steaming. Whisk remaining 1/4 cup almond milk and flour in small bowl until smooth; add to the hot milk and cook, whisking constantly until the sauce simmers and thickens, for about 2 - 3 minutes. Remove from heat and stir in shredded cheese until melted. Stir in cottage cheese, nutmeg, salt and pepper.

Cook pasta for 4 minutes, or until not quite (almost) tender. Drain and add to the cheese sauce, mix well. Spread half the pasta mixture in the prepared baking dish. Spread the spinach on top. Top with the remaining pasta, sprinkle with the breadcrumb mixture.

Bake until bubbly and golden, for about 25 - 30 minutes.
