Quinoa - Warm Cereal

Warm Quinoa Cereal

1 cup quinoa

2 cups water

2 cups unsweetened almond milk

1/2 tsp sea salt

1 1/2 tbsp maple syrup

1/2 tsp ground cinnamon

2 tsp vanilla extract

1/2 cup raisins

1/2 cup chopped walnuts

assorted fruit if desired

Rinse quinoa with cold water in a fine mesh strainer and drain.

Put the water, milk and salt in a pot and bring to a boil.

Stir in the quinoa, lower heat to medium low, cover and simmer for 15 minutes.

The Quinoa is done when quinoa is soft and has the consistency of oatmeal. You may add more milk if more liquid is needed, then continue to simmer another 5 minutes.

Remove from heat and stir in maple syrup, cinnamon, vanilla and raisins.

Transfer to bowls and serve warm with toasted nuts and fruit if desired.
