Avocado Chopped Salad


Chopped Salad with Avocado

This is my all time favorite salad, there are times I eat this Chopped Salad with Avocado for breakfast, lunch and dinner! I have eaten this salad without dressing, it has a wonderful flavor just as it is.

Salad:

3 Cloves Garlic (Minced)

1 1/2 tsp Salt

Juice of 2 Lemons

2 Roma Tomato, Diced

2 heads Romaine Lettuce, Chopped

1 Cucumber, Diced

1/2 cup Parsley, Chopped

1 Green Onions (Greens Only), Finely Sliced

2 Avocado, Diced

1/2 cup Dates, Chopped

1 Pomegranate, Seeds Only

Dressing:

2 tsp Sumac

2 tsp Dried Mint

1/4 - 1/2 cup Olive Oil

Salt & Pepper to Taste

Pita Chips, (if desired)

Mix all of the salad ingredients together.

Mix and add dressing to the salad just prior to eating.

Garnish with pita chips if you choose.
