Low Carb Chicken Pizza


Low Carb, Gluten Free Pizza

Ingredients: 12 oz. cooked, Extra Lean Ground Chicken 1 Tbsp + 1 tsp Italian seasoning 1/2 Tbsp basil 1/2 Tbsp oregano 1 tsp garlic powder 1/2 cup dry, gluten free quick oats 1/2 cup Low Fat 1% Small Curd Cottage Cheese 2 Large Egg White 1 Tomato, sliced 1 cup, Spinach 8 oz, Sliced Mushrooms 1/4 cup shredded Parmesan Cheese

Directions: 1. Preheat oven to 350 degrees. 2. Mix the “crust” (ground chicken breast, Italian seasoning, basil, garlic powder, egg whites and oats) by hand.

3. Flatten the “crust” on a pizza stone or in a 9x13” pan. 4. Bake the “crust” at 350 degrees for 20 min. 5. While “crust” is baking, wilt spinach and mushrooms in a skillet with a small spray of extra virgin olive oil. 6. Take out the “crust” and add the tomato slices, spread evenly. 7. Add the cottage cheese on top of the tomato slices, spread evenly. Add spinach/mushrooms and sprinkle with parmesan cheese. 8. Place pizza back in the oven for 10 min or until the cheese is the consistency you prefer
