Healthy Green Bean

Casserole

this healthy version of the Green

Bean Casserole.

1 lb Green Beans - rinsed, trimmed & cut in half

1 cup Mushrooms - chopped

3/4 cup Vegetable Broth

1 cup Unsweetened Almond Milk

2 TBS Olive Oil

1/2 Onion - chopped

2 TBS Flour

2 Cloves Garlic - minced

1 cup Crispy Fried Onions

Salt to taste

Preheat oven to 400 degrees. In a large pot bring water to a boil. Add green beans, cook for about 5 minutes. Remove beans and cool immediately in cold water. Drain and put into a 9 x 13 baking dish.

Place a large pot on medium heat, add olive oil, garlic and onion. Saute until onion is transparent. Add mushrooms and salt if desired. Cook for another 2 to 3 minutes.

Whisk in the flour and milk. Add vegetable broth slowly while whisking. Cook for 5 minutes until thick and bubbly.

Remove from heat and pour over green beans and stir. Place the fried onions on top of the casserole.

Bake for 15 - 20 minutes or until slightly golden brown.
