Spinach and Wilted Mushroom Salad
Fat & Dairy Free
1 Cup Organic Baby Spinach
1/4 Cup Red Onion - sliced
1/2 Cup Mushrooms - sliced
2 TBS Balsamic Vinegar
1 TBS Water
1-2 TBS Nutritional Yeast (to taste)
Heat Water, the Red Onion and Mushrooms in a medium skillet , saute until soft for about 5 minutes.
Put the mushroom and onion mixture on a bed of Spinach, sprinkle with Balsamic Vinegar and Nutritional Yeast (to your liking).
