INGREDIENTS:

1 Cup Uncooked Quinoa

1 TBS Water for Sauteing

2 Cups Vegetable Broth

1/2 Tsp Garlic Salt (to taste)

2 TBS Chili Powder

1 Tbs Cumin

1/4 Cup Onion, chopped

1/4 Cup Tomato Sauce

OPTIONAL INGREDIENTS:

  • lettuce

  • avocado

  • black beans

  • tomato

  • salsa

  • dairy free sour cream

  • dairy free cheese

  • tortilla chips

Rinse uncooked quinoa and strain for two minutes. This helps to get rid of the quinoa flavor.

Add quinoa to a large pot with water and cook on medium heat for 5 minutes until lightly browned.

Add broth and bring to a boil. Turn down the heat to low and let simmer for 20 minutes or until the liquid is absorbed into the quinoa.

Add remaining ingredients and stir until well mixed.

Cook for 5 more minutes or until the quinoa is crispy and resembles taco meat.

Serve as taco salad over lettuce with the toppings of your choice, avocado, tomato, salsa, dairy free sour cream, dairy free cheese and/or tortilla strips.
