Delicious Creamy Sweet Potato Pasta






Dairy Free. Gluten Free, Meatless and Delicious!

To Make Use

1 3/4 Cup Water

1 Medium Sweet Potato

Peeled & Cut into 1" Cubes

1 Carrot

Peeled & Cut into 1" Pieces

1 TBS Avocado Oil

1/4 Cup Avocado Oil

1/2 Onion, Chopped

1 tsp Garlic Salt

Lime, Juice of 1/2

1 TBS Dijon Mustard

1/4 Cup Nutritional Yeast

1 TBS White Miso Paste

1 lb Gluten Free Pasta, Cooked


Bring water to a boil in a large pot then add sweet potato and carrot. Boil over medium-high heat. Cook for about 10 minutes until vegetables are fork tender. Remove pot from heat, do not drain the water.

Heat 1 TBS avocado oil in a medium skillet over medium heat. Add onion and saute for about 3 minutes until soft.

Transfer the sweet potatoes, carrots and water to a high speed blender along with the contents of the skillet. Add remaining 1/4 cup avocado oil, lime juice. mustard, garlic salt, nutritional yeast and white Miso paste. Do not mix with the center plug from the lid of the blender in place. Remove the center plug and cover the space with a thick towel. (This will prevent an explosive huge mess!) Blend on lowest speed and increase gradually for 2 minute or until smooth and creamy.

Toss sauce with cooked pasta of your choice.
