Broccoli Soup



5 Cups Water

1 Bunch of Broccoli, Washed

(Separate the broccoli stems and florets)

1 Small Onion, Chopped

2 Cloves Garlic, Minced

2 TBS Barley Miso

1 Cup Brown Rice, Cooked

Sesame Seeds if desired


Bring water to a boil in a large pot. Add broccoli stems and the onion. Reduce heat and simmer for 15 minutes.

While simmering broccoli, remove 2 cups of the water from the pot. Dissolve the Miso paste in this water. Add the brown rice. Then return this mixture to the large simmering pot.

After the 15 minutes of simmering, place the soup mixture in a high powered blender and blend until smooth. When the soup is smooth return the soup to the pot.

Add the broccoli florets and cook for an additional 10 minutes. Serve and sprinkle a few sesame seeds if desired.
