Apple Salad
A flavorful chicken salad that is far from ordinary.
Ingredients:
1 Cup Plain Yogurt
1/2 Cup Fresh Basil Leaves
1/2 Cup Grated Parmesan Cheese
2 TBS Lemon Juice
2 Garlic Cloves
1 Rotisserie Chicken, shredded
4 Celery Ribs, sliced thin
2 Granny Smith Apples
cored & cut into 1/2" pieces
4 Cups Baby Arugula
Salt
Pepper
Place yogurt, basil, parmesan cheese, lemon juice, an garlic in a food processor or high speed blender on high for about 10 seconds, until smooth and pale green.
Combine chicken, celery, apples, and yogurt mixture in a large bowl.
Add the arugula just before serving to prevent the greens from wilting. Gently toss in the arugula and season with salt and pepper to taste.
