Goat Cheese

Pizza

We make pizza on Tortillas all of the time, they are easy and quick. If you would like you can make traditional pizza on a tortilla using pizza sauce, pepperoni and mozzarella cheese. Use your favorite toppings! Pizza on Tortillas are also great cooked on the grill!

Ingredients:

  • 1 Tortilla (gluten free, low carb - your choice)

  • 1/4 Cup Goat Cheese, Spreadable

  • 2 TBS Sun Dried Tomatoes, Chopped (not in oil)

  • Pinch of Red Pepper Flakes, to taste

  • 1/2 Cup Fresh Spinach and/or arugula

  • 1/4 Cup Mozzarella Cheese (dairy, non-dairy your choice)

  • Chicken (cooked optional)

Instructions:

Preheat oven to 350 degrees.

Line a baking pan with stick-free foil (my favorite for easy clean-up).

Place tortilla on the foil lined baking pan.

Spread tortilla with goat cheese, sprinkle with sun dried tomatoes, red pepper flakes (to your liking) and Spinach. Then sprinkle with Mozzarella Cheese.

Place baking pan with your pizza in the oven. Bake for about 20 minutes, start watching at 10 minutes to make sure that your pizza does not burn.

You can even grill these pizzas for extra flavor, they are fantastic on the grill!
