Spiralized Squash Salad
Get Out Your Spiralizer
For This Delicious Salad,
Featuring Both Zucchini
and Yellow Squash.
2 Medium Zucchini
2 Medium Yellow Squash
2 Cups Fresh Herbs, lightly packed
Any combination or parsley, basil, oregano or mint)
1/2 Cup Kalamota Olives, chopped and pitted
1/2 Cup Feta Cheese, crumbled
1/2 Cup Sun Dried Tomatoes, thinly sliced
1 TBS Lemon Juice
Zest of 1 Small Lemon
Freshly Ground Pepper, to taste
2 TBS Olive Oil or Oil of Choice
Spiralize Squash into the shape of noodles. You may want to trim the squash noodles to a desired length. Transfer to a bowl.
On a cutting board finely mince herbs and then toss with the squash noodles.
Add remaining ingredients and stir to combine.
This dish is best when served right away, enjoy.
