Mushroom Meatballs

Quick and Easy

Now that the weather is beginning to cool down, try this great tasting, easy to make comfort meal.

Mushroom Meatballs are great along side Yukon Gold Mashed Potatoes, Salad and Vegetable. Yukon Gold Potatoes are my always go to potato, they taste wonderful just the way they are!

  • 1 can Cream of Mushroom Soup

  • 1/2 Cup Water

  • 1 lb Ground Beef

  • 1/2 Cup Fine Dry Bread Crumbs

  • 2 Tbsp Minced Onion

  • 1 Tbsp Minced Parsley

  • 1 Egg (beaten)

  • 1/4 tsp Salt

  • 1 Tbsp Olive Oil

  • Cooked Yukon Gold Mashed Potatoes, rice or noodles (if desired) to serve with Mushroom Meatballs.

Mix water with the Cream of Mushroom Soup, set aside.

Measure out 1/4 Cup of Soup Mixture then combine with ground beef, bread crumbs, minced onion, parsley, egg and salt.

Shape the meat mixture into 1 1/2" diameter balls. Heat oil in a large skillet, add meatballs and brown all sides.

When meatballs are brown, pour soup mixture over the meatballs. Cover pan and cook on low heat for about 15 minutes, gently stir occasionally.

You may serve over your choice of mashed potatoes, rice or noodles.
