Easy weeknight meal.
1/4 Cup Dry Bread Crumbs (Italian Seasoned)
1/4 Cup Parmesan Cheese, Grated
1/4 Cup Mayonnaise
4 Boneless, Skinless Chicken Breast Halves
1/2 Cup Pizza Sauce
1/2 Mozzarella Cheese, Shredded
Preheat oven to 425 degrees.
Combine bread crumbs with parmesan cheese in shallow bowl, set aside.
In a large zip lock plastic bag add chicken and mayonnaise, shake to evenly coat. Remove the chicken, then lightly coat with the bread crumb mixture. Arrange chicken on a cookie sheet.
Bake for 20 minutes, then evenly top the chicken with pizza sauce, then mozzarella cheese. Bake for an additional 3 minutes or until the chicken is thoroughly cooked and the cheese is melted.
Enjoy with a side of mixed vegetables and a salad.
