Healthy & Delicious Italian Soup

With the weather changing, cold and flu season is upon us. This is a delicious soup to warm you up from the inside out. It is like getting a hug from my Italian Grandmother, whom I miss tremendously.

INGREDIENTS:

1 Roasted Chicken (that you find at all grocery stores)

1 tbsp Olive Oil

1 lb Carrots, diced

1 pkg of Celery Hearts, diced

1 small White Onion, diced

2 clove garlic, minced

2 Bay Leafs

1 tbsp Parsley, chopped

Salt and Pepper to taste

12 cups low sodium Chicken Bone Broth

1 large bunch of Curly Endive, cleaned and chopped

(you may use spinach or kale if you choose, I prefer Endive as in original recipe)

DUMPLING INGREDIENTS:

1/2 cup Cracker Meal

2 tbsp Roma Cheese, grated

4 large Eggs

Pepper to taste

DIRECTIONS:

I love using the roasted chickens that all of the grocery stores sell, they make recipes all that much easier! I purchased the unflavored roasted chicken.

Remove all of the chicken off of the bone and cut into bite size pieces. This is easier to do while the roasted chicken is still warm.

In a large pot heat 1 tbsp olive oil over medium heat. Add onion, celery hearts and carrots saute until vegetables are tender, about 8 minutes or so.

Pour in the Chicken Bone Broth, season the soup with salt and pepper to taste, add bay leaf and bring mixture to a boil. Reduce boiling broth to a simmer.

While the soup is simmering, in a medium size pot - add chopped endive to a large pot of water and bring to a boil.

Just as the endive comes to a boil, (make sure that the endive is tender) remove from heat and drain. (Make sure that the endive is tender before adding to your soup.)

Add cooked endive and cooked chicken to the soup, and bring to a boil.

In a medium bowl mix together 1/2 cup Cracker Meal, 2 tbsp Roma Cheese, 4 Eggs and Pepper, beat this mixture loose with a fork.

While the chicken soup is boiling, drop the dumpling mixture into the boiling soup, tablespoons at a time, add to soup slowly while stirring. After the dumpling mixture is added to your soup, continue to cook and stir occasionally for 10 minutes to cook dumplings.
