Black Bean and Corn Salad
& Corn Salad
Delicious as a Salad or Dip With Corn Chips
1 15-oz can black beans, drained
2 cups Sweet White Cut Corn (can use canned)
2 large ripe avocado, diced plus additional slices for garnish
3 roma tomatoes, diced
1/4 cup chopped green onions (I use the greens only)
1/4 cup chopped parsley
Tortilla chips for serving - if not used as a side salad
1/4 cup olive oil
1/4 cup red wine vinegar
1 pkg italian dressing
Combine in a bowl, black beans, corn diced avocado, tomatoes, green onion greens, and parsley.
Prepare dressing, combine all ingredients and whisk to blend. Stir into the vegetable mixture.
Cover and chill for 1 hour.
Garnish with avocado serve as a salad or with tortilla chips as a dip.
