Chicken Satay with Peanut Sauce

Chicken Satay

with Peanut Sauce

A simple and delicious

chicken dish.


1 cup Italian Dressing, divided

1 tbsp firmly packed Brown Sugar

1/4 tsp dried Parsley

1/4 tsp ground Ginger

4 boneless, skinless Chicken Breast

Pounded thin and cut into strips.

1/2 cup Creamy Peanut Butter

1/4 tsp Curry Powder

1/4 tsp Ground Red Pepper Flakes


Chicken Marinade:

Combine 1/2 cup italian dressing, brown sugar, parsley and ginger.

Place chicken into a gallon size ziplock plastic bag. Pour 1/4 cup marinade over the chicken, mix to coat. Close bag, mariante in the refrigerator, turning occasionally for 30 minutes to 3 hours. Refrigerate the remaining marinade.

Peanut Sauce:

Blend peanut butter, 1/2 cup italian dressing, curry powder and red pepper flakes, refrigerate until ready to serve.

Preheat the grill or broiler.

Remove chicken from the marinade, discarding marinade. Thread chicken onto skewers. Grill or broil chicken, turning once and brushing frequently with refrigerated marinade until the chicken s thoroughly cooked.

Serve with peanut sauce.
