Heart Smart 7 Layer Salad
Ingredients:
6 Cups Salad Greens of Choice, bite-size
2 Medium Celery Stalks, thinly sliced
1 Cup Radishes, thinly sliced
8 Green Onions, thinly sliced
6 TBSP Bacon Bites
10 oz Frozen Green Peas, thawed
1 Cup Nonfat Plain Yogurt
1 TBSP Low Fat Mayonnaise
1/2 Cup Parmesan Cheese, grated
Instructions:
Place bite size salad greens in a medium glass bowl.
Layer the celery, radishes, onions, bacon bits and peas on top of the salad greens.
In a small bowl, mix together the yogurt and mayonnaise. Spread mixture over the peas, covering the top completely and sealing it to the edge of the bowl. Sprinkle the top with the Parmesan Cheese.
Cover and refrigerate to blend the flavors, for at least 2 hours but not longer than 12 hours.
Toss briefly before serving if desired.
