Delicious & Simple

One Pot Meal

This Vegan Stew is a Delicious, Simple One Pot Meal that can be used either as a stew, goulash or sauce. Depending on the thickness you choose. Less thick: use as sauce, put over pasta or rice. Thicker: use as Stew or Goulash and eat as is.







Ingredients:

  • 2 Tbsp Olive Oil

  • 1 White Onion, chopped

  • 2 Small Zucchini, chopped

  • 2 Lbs Mushrooms, chopped (use a variety of mushrooms of your choice: White, Portobello and/or Shitake)

  • 1 Can Rotel Tomato and Chopped Green Chilies (Your choice of Hot: Mild, Original or Hot)

  • 2 Cups Vegetable Broth, low sodium

  • 1/4 Tsp Ground Pepper

  • 1/2 Cup Red Wine

  • 1/2 Cup Quinoa (Pre-Cooked)

  • 1/4 Cup Bob's Red Mill Textured Vegetable Protein (TVP)

  • 1/4 Cup Bragg Nutritional Yeast Seasoning

Instructions:

Heat olive oil in a large skillet. Add chopped onion and saute for about 4 minutes. Add chopped zucchini, stir and cook until the onion begins to caramelize for about 5 minutes.

Add the chopped mushrooms, stir and cook until the water from the mushrooms begins to evaporate for about 20 minutes.

Add ground pepper, Rotel, vegetable broth, and red wine mix well. Bring to a boil, reduce to a simmer, stir and cook for about 30 minutes.

Add Quinoa, TVP (amount added is depending on thickness desired) and Nutritional Yeast stir well, cook and blend for another 5 or 10 minutes.
